These were very skilful. Both my husband and son liked them a lot. I used sour cream instead of yogurt, and jack instead of mozzarella cheese, merely otherwise followed the directions exactly. I institute that ane 1/2 lbs. of meat was a bit likewise much to fill the tortillas and still be able to coil them up, so I just sprinkled the extra meat on top. But probably 1 lb. of meat would be ample for the recipe. Also, heating the tortillas, covered, in the microwave, to soften them a bit would brand them easier to roll upwards without without dandy.

Even though the chicken soup scarred me, I tried this recipe anyway. This was the all-time dish that I have served in a long fourth dimension. I used flour tortillas, sour foam instead of yogurt and chedder jack cheese. This reminded me of a favorite dish that I like from a mexican eating house. Also, employ a 9 x 13 pan when cooking.

Although my eyes widened at the thought of mixing foam of craven with beefiness/mexican food, this was great!! I ommitted the jalapenos but added one iv.5oz can diced greenish chilies to the soup/cheese mix. I used 1/2 cup yogurt and one/ii cup sour cream and used half moz cheese and one-half 3 blend mexican cheese. I also used flour tortillas and turned out great (HOWEVER-recall to grease the baking dish or they volition stick!!). Served with shredded lettuce and chopped light-green peppers and we all thought they were terriffic! Will make again!!

This was a great starter recipe, only I fabricated some changes like many of the other reviewers. I used Campbells southwest cheese soup instead of the chicken soup, regular onions instead of green onions, and sour cream instead of the yogurt. I also added a can of diced green chiles, and used flour tortillas. It was fantastic! My boyfriend wouldn't terminate eating the filling with the torts. even earlier I got the chance to put it in the oven to bake! This will go in my recipe volume for sure!

These were very good, my whole family unit enjoyed them.I used flour tortillas instead of corn and substituted sour cream for the yogurt. I likewise used shredded cheddar cheese, but next time volition utilize a mexican shredded cheese blend. Whenever I make a dish like this I pour a little taco sauce in the bottom of the pan, this keeps the lesser of the tortillas from getting hard.

Made this recipe a little healthier. I used LOWFAT yogurt,98% FAT-FREE cream soup, simply 20 oz.of ground Actress LEAN TURKEY, ii% MILK mozzarella cheese, Fatty-FREE FLOUR tortillas (softened in microwave) and fresh diced tomatoes on meridian. What a great season! The creamy mix with the mexican spices is unique and succulent. This now goes to the "favorite" file!

My husband and I had these the other night. We make a new recipe every Mon nighttime to keep our tastebuds happy. We alive in Texas and have tons of Mexican food available, but these were past far amend than what most restaurants serve. I didn't change a thing near the recipe.
03/27/2003
This recipe was disappointing and would exist better named "American Enchildadas". To be fair to the submitter, I always follow a recipe exactly the starting time time I make it, simply my family unit idea these were bland. I usually make chicken or seafood enchiladas with a green or scarlet sauce and I thought the footing beef would exist a nice change. The soup, yogurt, and mozzarella sauce was interesting, but at that place was as well much of it and the footing beef filling for just 6 corn tortillas. Also, the taco seasoning didn't seem quite correct and perchance the recipe would accept been better if I had used my ain seasoning combo instead of the taco seasoning mix and had used monterey jack cheese instead of the mozzarella. I won't make these again.

I take changed a few things with this recipe since it was first posted. I employ tortilla shells instead of the corn and most oft employ sour cream. I have also used cream of mushroom and onion soup, and it is great. I use tex-mex cheese bblend in the mix and once they are all rolled and in the pan I also spoon sour cream over top and then more tex mex cheese. Onions and peppers are great fried in with the beef or chicken when I utilize information technology. Another affair I oftentimes add is some salsa prior to rolling.
06/26/2003
I loved these!!! I was out of foam of chicken soup, and then I used foam of mushroom and I used sour cream in identify of the yogurt. I did non take mozzarella on paw so in went some cheddar cheese (about twice equally much every bit was chosen for). I also put some sliced blackness olives in with the meat mixture! Even though the way I made it is a existent avenue stopper upper, information technology was just sooooo yummy!

Although my eyes widened at the thought of mixing cream of craven with beef/mexican nutrient, this was great!! I ommitted the jalapenos but added one 4.5oz can diced light-green chilies to the soup/cheese mix. I used i/two cup yogurt and 1/2 cup sour cream and used half moz cheese and half 3 alloy mexican cheese. I also used flour tortillas and turned out bang-up (HOWEVER-remember to grease the baking dish or they will stick!!). Served with shredded lettuce and chopped dark-green peppers and nosotros all thought they were terriffic! Will make again!!

I accept fabricated this recipe about 10 times and it is a family favorite! I use sour cream instead of the yogurt (I made it once with yogurt and my family prefers the version fabricated with sour cream instead of yogurt). From making this I have establish that substituting fresh chives for the green onions works fine (for those times when I had no green onions but my chive plants are ever producing). Also I take constitute that when I have no jalapenos that tabasco peppers work as a skillful substitute (I abound tabasco peppers in my garden). The one time I used a habanero, my family said it was a little spicy for their tastes - but I enjoyed the actress heat of the habanero (with whatsoever pepper I don't clean out the seeds, I just dice and add it in). A tip I used from another review is to estrus up some oil in my cast iron skillet and to "heat up" the tortillas about three-iv seconds each side before putting the filling in. This makes for an easier time rolling/folding them and IMHO information technology also gives the tortillas a better taste. I commonly utilize corn tortillas, but accept used flour tortillas the same style in this recipe with great results. I would also like to give a large thank you to the poster of this recipe, every bit my family unit loves eating these.

As suggested by other reviewers, I used sour cream & southwest pepperjack soup for the cheese mixture. I also added more cheese and used a mixture of cheddar & mozzarella. For the beef I merely used i/2 bunch of greenish onions, three cloves finely minced garlic & a shallot also finely minced along with some onion powder. Instead of packaged taco seasoning, used one found on AllRecipes. Used craven stock in place of water. For rolling the tortillas (flour - personal preference) I put a skillet of heavy cream on low & dipped them into information technology starting time then they are easier to roll. Topped them off with the red enchilada sauce from this site before spooning the remaining cheese mixture over the top. Seems like a lot of alterations just information technology really wasn't. Excellent recipe.
04/24/2003
VERY yummy! Tasty and simple, although adjacent time I volition use flour tortillas every bit suggested by others. I used supposedly loftier-quality corn tortillas and they ripped open fifty-fifty though I was very careful non to over-fill them. Also, next time I volition garnish with chopped tomatoes and cilantro, this would lighten upward the recipe a bit. By the way, if yous're making half dozen enchiladas, they won't fit in a 7x11" pan. Try 9x13 instead. Also, you lot'll have lots of delish leftover ground beef...I put mine in difficult taco shells the next day - YUM! Lastly, don't forget to wear gloves while dicing the jalapeno!!! (I learned that lesson the hard way)
03/02/2011
To keep my flour tortillas from turning into nasty mushy dough, I first LIGHTLY grease the drinking glass dish with meat shortening, then I lightly butter and identify the tortillas butter-side upwards on a metallic baking pan in my oven @ 350 for about 5-vi minutes prior to stuffing with meat. I also added the soupy cheese mixture merely effectually the perimeter of my drinking glass baking dish and the ends of the enchiladas, leaving the very eye of the dish covered only slightly with a dusting of shredded mexican alloy cheese. Don't crowd the enchiladas in the dish, requite them a little room betwixt each other for the heat to circulate. this keeps them crisp. Good recipe, kids loved them and I fabricated information technology again yesterday!
09/13/2003
This recipe is fantabulous!! I noticed some reviewers seemed to call back something was missing...I ever arrive with 2 lbs. meat, one/two a bell pepper, a lilliputian more jalapeno, half the taco seasoning and 3/4 can cherry, hot enchilada sauce. All those extra ingredients add a lot more season. Also, I use flour tortillas instead of the corn. You'll accept to utilize a 10x15 blistering dish just to fit it all. It is a lot more delicious this mode!!!
01/08/2003
My co-worker and I both stock-still this recipe on the aforementioned night. She and her hubby absolutely LOVED it!! My daughter was watching me fix it and wrinkled her nose at the time. Past the fourth dimension dinner was served, she was asking for seconds!! Fifty-fifty my 3 year one-time son cleaned his plate!! My husband, who cares very picayune for any type of Mexican nutrient voiced his approving!! Excellent recipe!!!
05/06/2008
These were good merely not great in my opinion. Corn tortillas tear easily when rolled then that was a small problem. I left of the pepper and dark-green onion (family preference). I did make a few additional enchiladas filled with bbq chicken and glazed onion. Make sure you embrace the enchiladas completely with the sauce and foil, unless y'all want the edges to be crisp.
06/26/2006
This was a great basic thought. The cream of chicken soup really adds a great flavor, simply like a lot of others, I nixed the yogurt and substituted sour foam. I also added a can of drained black beans in with the meat, veggies, and taco seasoning, and on top, added mexican blend cheese and a can of enchilada sauce earlier baking. Very filling, just a bully recipe!
02/28/2003
This recipe was absolutely delicious and I yet accept my husband of 6 months believing I am a skilful cook! I omitted the peppers and onions, added light sour cream instead of yogurt, added merely 3/4 pound of meat and substituted a can of corn for the remainder of the meat (since I'm non a huge meat fan). I make this all the time!
01/30/2011
A not bad recipe! Very piece of cake, very flavorful and delicious. I added some chipotle peppers in adobo sauce to the cream sauce for some extra kick. The smoky chipotle flavor goes REALLY well, but this recipe stands up fine without information technology also.
12/05/2011
At that place were a winner!! I used green chilis instead of jalapenos and sour cream instead of yogurt. Utilize the mozzerella cheese...information technology will suprise you!! Tastes only like a cheese sauce! I put enchilada sauce on the bottom of the pan, I only used 4 tortillas....i stuffed them to the max!! besides added some salsa with the beefiness & cheese mixture. Put the rest of the sauce on peak and topped with some more mozz cheese...baked for thirty mins! Absolutely wonderful & will definitley make again!
11/01/2002
Super piece of cake, super fast! Great if you are in a hurry. I used flour tortillas considering that was all i had. However, for those who take trouble with corn tortillas falling apart, you take to dip them in hot oil for about 3 seconds first and they will fold nicely. I as well used greenish chilis since i don't like hot stuff. Make the Mexican Rice II recipe on this site and it makes for a fantastic meal.
08/06/2003
I idea these were excellent!!!! I substituted the sour foam for the yogurt and used a combination of shredded cheeses I had (mozzarella, monterey and colby), also added garlic, paprika, and chili powder to the meat. The only trouble is the corn shells broke easily. Side by side time I will apply an enchilada sauce to soak them in get-go. Besides, would use additional sauce for the top of the dish. Volition definetly make once again!!!
06/22/2009
My stepdaughter made this with flour tortillas, which nosotros didn't really like. So I made it with corn tortillas, and it was much better. I omitted the jalapenos and substituted a small can of green chilies. I also added a small tin of sliced ripe olives (drain first) to the meat mixture. But I cannot for the life of me sympathise how all that meat mixture volition fit into just vi tortillas! I used virtually an entire 24-count package. I also discovered that smearing the cheese mixture onto the tortilla, then calculation the meat mixture, works better - gives the meat something to cling to. Seam side down in a glass 13x9 pan works well. Simply be sure to spray the pan with non-stick spray first. This recipe is a keeper; we absolutely beloved information technology!
07/19/2002
My whole family LOVED this recipe...I did make a few changes. I used flour tortillas(that'due south what I had on manus) and I used sour foam instead of yogurt and used pepper jack cheese instead of mozzarella. This is the all-time enchilada recipe I accept meet in a long fourth dimension!!Thank you for submitting this recipe ~ I don't recall my husband will permit me go back to regular enchiladas after trying this one.
04/23/2003
This was a VERY good dish. I used shredded Mexican cheese (combo of Monterrey Jack, Cheddar etc),fat free yogurt,98% fat free condensed cream of chicken soup, and flour tortillas (instead of corn) since I already had those. If you want a fleck more of a bite, I'd recommend using 2 jalapeno peppers (instead of ane). As well, VERY important: if you bake them in a glass Pyrex dish like I did, DEFINITELY spray your dish with Pam otherwise the tortillas will stick to the pan (a pain!) All the same, after the first bite, I forgot most that and just concentrated on enjoying the meal. All my hubby said between mouthfuls was mmmmmmmmmmmmmm......
09/30/2003
The cheese inside and on top of these enchiladas was too thick.
05/24/2004
My family Really enjoyed this. Great weeknight type of repast. When I cook Mexican I usually lean toward more authentic - but you don't always accept the time for that! I have to admit that I was very skeptical of the cream of chicken soup - but with the mozz., the sauce reminded me of the white cheese sauce you sometimes get at Mexican restaurants. I used the depression fat cream soup, 1 pound on meat, added ancho, black pepper, white onion, corn and diced red pepper to the meat mix. I likewise drizzled some crimson enchilada sauce on top of the dish, along with diced greenish onion and cilantro. Definate practise again. Tasty and easy to kicking!!
07/27/2012
Ive used this recipe for about two years now, the merely divergence in mine and this 1 is I do not use mozarella cheese, I use the cream of craven soup and a jar of salsa mixed in the soup let information technology warm upward on the stove mix virtually two tsp of taco seasoning mix in the soup, pour over the ENCHILADAS, acme with 2 cups of cheddar cheese. Yum!
03/26/2003
These were sooooo skillful and easy. I used dark-green chiles instead of jalapeno's, sour cream instead of yogurt, Mont. Jack cheese instead of mozz., and flour tortillas instead of corn. I'1000 planning on trying the yogurt next time, without letting the boyfriend know!
xi/xix/2002
This was my first attempt at enchiladas, and they were delicious!! I added Extra Spicy taco seasoning and a footling actress jalepeno, because I similar spicy stuff. I used cream cheese and "Tex Mex" blend cheese (because I was as well lazy to grate it all), which was all the same great. I also used flour tortillas, because that was all I could detect, only didn't listen to previous advice- yous HAVE to grease the pan with these. Also, I seem to have gotten almost twice as many enchiladas as expected... not a bad affair, in my stance, just be certain to accept extra tortillas on manus!
06/30/2003
These were skilful...I did have some problem rolling them upwards. I besides used sour cream instead of yogurt...I volition make again, but probably try to spice it up more. Thanks for posting.
08/17/2002
These were great! However, to satisfy my family'due south tastes I used flour tortillas, omitted the jalapeno, and added a small can of light-green chiles to the cheese/soup mixture. Yum!
01/11/2003
I made these with flour tortillas. Proficient but next time I will change past using mushroom soup instead of chicken and using only 1/ii pkg of taco seasoning. Pretty good.
01/31/2011
Very practiced and very easy to make! I substituted garlic for the jalapeno pepper and sour cream for the yogurt. I also used flour tortillas since I prefer them to corn tortillas. This recipe is definitely worth trying!
04/16/2002
Yogurt is the hush-hush ingredient hither. My whole family loved this amazing dish. I used simply 1lb of ground beefiness and it was more than enough. Don't hesitate to add the entire jalepeno (or 2). We don't like spicy-hot foods and the whole pepper wasn't also much for u.s.a.. Corn tortillas add extra flavor and texture but if you dislike corn tortillas, I'm sure flour would be great, as well.
06/08/2006
Unless I actually hate information technology I don't usually rate a recipe low. This was a pretty practiced dish simply the recipe itself was not skillful plenty to give it five stars. I was a little skeptical nigh mozzarella and non-red sauce on beef enchiladas but I had the ingredients on hand. Information technology made tons of meat and cheese mixture for 6 petty six"tortillas and a 7 x xi pan and I merely made ane lb. of ground beef. This could take easily been stretched into 10 or 12 tortillas in a 9 ten xiii pan. The stringy gooey attribute of the cheese was the best part but the flavour was zero extraordinary. I used sour cream simply yogurt wouldn't have fabricated it any better. I left out the jalapenos and used regular onion and bell peppers. Mayhap the extra heat would have pepped it upwardly a bit. I meant to put some additional salsa on tiptop of the servings but forgot. I'll try that this evening with the leftovers. For colour I sprinkled a few crushed orange nacho cheese flavored tortilla fries on tiptop because this looks pretty bland. Information technology won't become thrown out but I doubt I'll make it again and from a cheese-aholic that is not very high praise.
05/28/2011
I loved this recipe! My 2yr old loved it to. I made a few changes though. Offset I used half a sweet medium onion to brown with the basis beef and a small (3oz) can of roasted jalapenos. Be sure to use corn tortillas or information technology will exist soggy. Also, I used sour cream instead of yogurt b/c that is what I had. I added ane tin water to the cream of soup mixture b/c it was really thick. After, I put 1cp of Mexican shredded cheese on top. Finally subsequently it was baked only before serving I topped the dish with fresh diced tomatoes and green onions. It was beautifu besides as then easy and good!
08/04/2011
This was pretty good. I likewise subbed sour foam for the yogurt, cheddar for mozz and used the southwestern soup instead of the cream of craven. To me information technology needed something hence the four stars. Side by side time I'g going to stick with the recipe -like i probably should take - and perchance the craven soup will exercise the trick.
04/14/2012
These were very, very rich and yummy. I didn't accept jalapenos so I used balmy greenish chilis. Next time I will use jalapenos because the spice would have complimented the creaminess meliorate. My hubby hates cream of chicken, but loved the creamy sauce.
09/09/2012
When I starting time read this recipe and saw the serving sizes I was skeptical. 1 enchilada would make full up my hubby? Ha! I DID stop up with way more than beef than I needed only wow!! 2 enchiladas=overstuffed husband! And improve yet, requests for a rerun at some bespeak! That'southward high regard indeed!
06/29/2005
I used Campbell's southwest cheese soup instead of the cream of chicken soup. I substituted sour foam, similar another member mentioned, and used a mexican cheese mix. I always use more cheese than called for. Merely a tip, y'all must soak the corn toritillas in warm water or milk before trying to fil and fold them, otherwise they will break up. Pretty proficient, just unlike then non my favorite.
eleven/20/2002
I made this and my whole family unit loved it! I made a double batch and here are the adjustments I made: I used half yogurt, half sour cream I used one package of taco seasoning and i package of the dry enchilada sauce mix I used red enchilada sauce and dipped each flour tortilla in the sauce before filling information technology (this makes information technology easier to roll the tortillas up equally well)! The double recipe made a bunch, though...adjacent time I will brand a regular batch, with my modifications!
07/25/2007
I really liked this a lot, but I made a lot of modifications, per everyone'due south suggestions. I used fatty gratuitous sour cream instead of yogurt, depression fatty/low sodium creamed chicken soup and I also used a 1/2 can of enchilada sauce to line the bankroll dish prior to placing the enchiladas in the pan. I also tried some with footing turkey breast and some with shredded chicken....both were excellent. (I did make some without the canned enchilada sauce, but I institute it lacking flavor....could be just a personal preference.) I really loved this every bit a base of operations recipe considering you tin cull to brand information technology low fat, really spicy or not. Cheers thank y'all thank you....this volition become a staple in our house. Oh aye...and my hubby loved it!
08/22/2002
I tried this recipes with a few alterations suggested past others (i.e. sour cream instead of yogurt, pepper jack instead of mozzarella) and a few of my own (roasted salsa in in meat mixture, extra cheese on summit), and this turned out GREAT! I am not a very skillful cook, but this recipe was extremely easy and my boyfriend says I should definitely make this once again. Every bit someone else mentioned, the it did take a trivial more fourth dimension to melt so was called for (about 40 minutes). All in all, a definite keeper!
05/20/2003
These were good, but there didn't seem to exist plenty beefiness flavor--it was somewhat overwhelmed by the craven soup. Next time I will endeavour using 8" flour tortillas so that I can fit more than beefiness in them, and using an extra bundle of taco seasoning mix, but the meat didn't seem to be seasoned quite enough. Also, the 6 6" tortillas did not fit well in the 7x11" dish, it works much better in a 9x13". I definitely will try this recipe again!
06/02/2003
I made these per the recipe except that I used 12 tortillas and layered them in the dish, making a sort of Mexican lasagne. Delicious!
04/11/2005
This was actually skillful... I was a fiddling unsure when I saw beefiness and craven soup, and since I didn't have whatever on hand anyhow, I used cream of mushroom. It was very tasty. Also, equally per other reviewers, I used sour foam instead of yogurt, and chedder instead of mozzerella. If information technology is too salty, I reccommend using the low sodium taco seasoning.
03/22/2006
Pretty good, we enjoyed this recipe. I used canned jalapenos and it was too spicy. Used fat free plain yogurt and reduced fat cream of craven soup, taste was not low fatty-ish at all (fooled my married man). Topped with salsa perfected it.
eleven/08/2014
I followed the recipe exactly and information technology was proficient but if I make these again I would thin out the cheese filling....way too thick, I would add the soup and yogurt to the beef mixture and thin out with water or chicken broth and save the cheese to melt on the height.
10/08/2010
Absolutely wonderful! Similar others, I fabricated the post-obit changes: used sour cream instead of yogurt and added a tin of enchilada sauce (half on bottom of pan, one-half poured over height). Yummmy! The chicken soup sounds strange but the cheesy sauce was absolutely amazing so don't uncertainty it!!
02/11/2003
Made these for supper tonight and they were scrumptious! Husband wanted to make sure they were added to the regular rotation. Like some of the other reviewers, I used sour foam instead of yogurt and used the packaged Mexican cheese alloy. Too fried the tortillas a couple of minutes. Fabricated 8 big servings. These are great!
01/10/2008
Family unit favorite!
12/16/2010
Very skilful recipe. Adequately easy to assemble and succulent.
12/08/2010
It was proficient, merely aught special.
09/17/2002
These were pretty tasty! Nosotros also used sour cream instead of yogurt and since I am vegetarian we replaced the beef with veggie meat. I remember they could have had more stuff in them, similar some vegetables or peppers or something.
08/twenty/2004
I wasn't a huge fan of this. Next time I will apply fat free sour foam instead of yogurt (the yogurt was OK, I just call back I'd similar the sour cream better), and I will employ greenish chiles instead of the jalepeno. I also had a difficult time rolling the smaller tortillas, and might utilize the ten inch ones instead. I used Monterey Jack and Cheddar instead of mozzerella since that is what I had, but I think mozzerella will be a much better pick!
05/18/2005
Instead of the cream of chicken soup, I use an enchilada sauce from this site. I also utilize flour tortillas, omit the jalapenos (my GF doesn't similar hot spices) and whatever cheese I have on hand. This has go our favorite dinner.
07/08/2010
I accidentally put cheesy flavored taco seasoning on the ground beefiness. It still was incredible! I am going to try and make a dip out of this for football flavour. That cheese combo is out of this world. I'one thousand trying to think of what else I can put that on. For now, I'll brand a dip with some taco meat on the bottom. That being said, this recipe as is is amazing! Give thanks you lot for sharing.
01/12/2008
The best enchiladas I take always eaten! My family loved them.
03/29/2011
My family loved these. We had them for dinner this night. Adjacent time nosotros're going to serve them with shredded lettuce and diced tomatoes though! There will be a next time for this recipe!
05/xiii/2005
this is equally good as anything that I have always had at a mexican place, my boyfriend loves mexican food he could swallow it e'er day and he simply loves this, I did change a few things to fit our taste I used flour tortilla instead of corn, used sour cream instead of yogurt, used cheddar cheese in place of mozzarella, a great recipe.
04/xvi/2012
i Modify IT A LITTLE I USED 1 CAN OF Foam OF MUSHROOM AND 1 CAN OF Foam OF CHICKEN ALSO INSTEAD OF WATER I USED THE JUICE OF THE CANNED PEPPERS. It WAS GREAT
05/fifteen/2003
Made this dish this night for dinner. Did apply Sour Foam instead of yogurt and mexican cheeses with just a lilliputian mozzarella. I used x 6" flour tortillas and still had some meat left over. Froze it for tacos later on. My husband and I, and one grandaughter liked information technology and said I should make it once more. I will! Thank you, Nannie
11/12/2003
I ordinarily do two pounds of beef, ii taco seasonings, and 3 cxups od mozzarella - I LOVE THIS!!!!! HUGE HIT at my house!
04/16/2012
I simply beloved this recipe! The start time I made it I followed the recipe but this time I did what a few people said and dipped my tortillas in red enchilada sauce. It made it even better! The whole family unit has approved this one.
09/fourteen/2015
I actually appreciated having this delicious recipe as a base with which to be a fiddling creative. The yogurt instead of traditional sour cream was much healthier and made the dish taste like Mexican comfort nutrient. I simply sauteed diced onions and green peppers before browning the meat. Once the taco seasoning/water had simmered, I added the vegetables back to mix with lots of cilantro. Because I merely had i pound of ground beef, I added a can of drained blackness beans forth with some green verde sauce in place of the light-green chilis. All I had was shredded cheddar cheese so I used that instead and since I don't own a 7x11 pan, I just used a well greased 13x11 pan. Since the pan was larger, I used ten six inch flour tortillas and put the remaing sauce and some cheese on top earlier baking. My married man really enjoys Mexican food and this piece of cake recipe was a real winner in his book. Tasted as good or better than favorite restaurant enchiladas! Thanks for a new way to use basis beef.
x/05/2014
I dearest it!!! I fabricated information technology last night and it tasted better than enchiladas on a bill of fare at a eating house. I used sour cream (well-nigh a half a cup) instead of yogurt. It truly was extremely delicious. The dark-green onions and jalapeno pepper makes it sense of taste scrumptious! I recommend this recipe if y'all similar enchiladas. It is not a lot to do to make it and yous will definitely enjoy information technology!!!
05/18/2010
omg this was so yummy my married man and kids loved it i added green peppers to the beff mixture and used two cans of soup.. but this will exist a must take recipe in our household
04/21/2009
This is such a great recipe to aggrandize on, I LOVED the thought of adding cream of chicken soup and yogurt (or sour cream in my instance) to the filling which is why I chose this ane to endeavor. I used i pound of ground beef to which I added ii cloves of garlic and minced onion forth with the green onion and taco seasoning, and 1 small can greenish chiles since I didn't have whatever jalapenos, which was enough for the 7 flour tortillas I used instead of corn (I also added virtually 3 oz. foam cheese to the meat mixture, only for a bit more richness). Make certain you oil your blistering pan before putting your enchiladas in, it volition make serving and clean-upward SO much easier. My husband loved it which makes it a keeper, thanks for sharing this.
10/12/2011
This recipe is correct on! I spiced up the meat a little and used flour tortillas and Sargento'due south accurate Mexican cheese mixture. I also used lite sour cream. They were quick and easy and anybody enjoyed them. I volition brand them often.
12/19/2010
Really, really practiced. 'nuff said.
11/06/2011
These were much tastier than I expected. I used Greek yogurt, which was non thin enough to get "runny" when diluting the foam soup, so use regular yogurt (or yogurt + milk, whatever). I used 12 of the 6-inch tortillas, I could non have properly folded this much filling into merely 6 of the footling ones (and I only used 1 lb of ground beef, so you might need a few more to practise 1.5 lbs). I stole someone else'due south idea to sprinkle the extra meat across the top and quite liked that thought. Thanks for the recipe!

I really loved this. While information technology was non "traditional," information technology was very tasty. I would add together another jalapeno for a bit more than zest. Like others, I used sour cream instead of yogurt. I also used Pepper Jack.

I fabricated these the other mean solar day, and like others used sour cream instead of yogurt, and so instead of chicken soup, i used cheddar cheese soup and a lot of cheddar cheese!!!!

This recipe was groovy!! We thoroughly enjoyed the meal. I used flour tortillas and after rolling them up, I flipped them over, so they stayed together better. I did non use yogurt, I used a mixture of sour cream and milk with the soup, and used one cup mozzarella cheese and one loving cup cheddar. They had to bake for most 40 minutes, which is longer than the recipe calls for, but this was a smashing meal. I will definitely brand this again!!

Then awesome. Added yellow, red & orange diced pepper & onion to the meat mixture (had no taco seasoning so I threw in a bunch of random spices); instead of yogurt/sour cream I use HELLUVA DIP - it adds a great flavour. Mixed that with the chicken soup and cheese. Filled v 9'' flour tortillas, fastened the tortillas with toothpicks (swell tip so they stay together), sprayed my drinking glass pan with pam prior to putting the enchiladas in and voila!

Awesome! I made this for my husband with the jalapenos and for the kids and I without. I used sour foam instead of the yogurt because I'chiliad a sour foam freak. My husband could not get plenty. He said he was total at 2 simply he ate 5. My husband had me brand thirty of these for a football game game. I made 15 with chicken instead of beef. They were great. Every one wanted the recipe. I as well added dark-green pepper in when cooking the beef or chicken. Gave the meat a wonderful flavor.

I made this and it came out great! Made a few changes, used low fatty cream of chicken, low fat sour cream, basis turkey and added taco sauce to the top. I volition most certainly make this again. Recommended!

Honey It. I added refried beans and substituted lactose/gluten free mozz. cheese.
02/11/2012
This was a fantastic recipe! I used 8 medium sized flour tortillas instead of corn. I as well but used 1lb of footing beefiness instead of ane 1/2 and it seemed to be the perfect corporeality. Has anyone made these the dark before and baked them in the oven the next 24-hour interval? Wondering if I tin already gather them the night before and just stick them in the oven the side by side 24-hour interval?

These enchiladas are wonderful...I made these for my boyfriend and nosotros LOVED them. The recipe says six - 6 inch tortillas, but I call back it should read 16 6 inch tortillas. -- Enjoy

Very tasty... only change I made was sour cream for the yogurt.

This recipe was delicious! My husband (very picky eater) rates this a 4 ane/two 5 star dinner- very impressive for our house! I added chili pulverisation to the soup mixture and onions. The corn tortillas definitely cruel apart so if I was serving guests I would dip them in oil like the other review stated, that would have been helpful to roll them up. Fabricated a lot too! *****

I'thou a higher educatee and I made these for my roommates. Everyone idea they were bang-up and the ingredients are relatively inexpensive!!! I added mexican cheese, sour foam, and diced tomatoes and it was really proficient.

i fabricated this as per the recipe and used corn tortillas as i tin't eat flour ones. Make sure you warm the corn tortillas before you try and put the mixture in them information technology makes them easier to handle. A large success especially with the mexican rice

A lilliputian time consuming, but worth information technology, very good! Next time married man requested craven in this same recipe, I think that is a slap-up idea! Simply too very skillful every bit is.

Keen recipe. I made these with the chicken enchilada recipe and they were simply as great!
02/02/2004
This recipe was great..Kids loved it...I had a burrito kit on hand then used that..I substituted green pepper for the jalapeno (my family doesn't like hot foods) As well used sour cream instead of the yogurt. I didn't have Cream of Chicken soup and so used Foam of Celery instead..Information technology was nonetheless excellent and I can't wait to try information technology with the Cream of Chicken soup next fourth dimension...

This recipe was really good! I substituted sour cream for the yogurt and mexican blend cheese for the mozzarella and information technology was awesome! Will definitely make again!

Very proficient and easy to customize since I have picky kids. I made the tace meat without the onions and jalapeno's. I made 3 enchiladas with only the taco meat and added chopped pickled jalapenos to another four and put in a nine x13 inch pan. Next fourth dimension I will do the same, but may add together some regular cherry-red enchilada sauce to the the bottom of the pan.

Tastes groovy! Used regular onion instead of green, mexican cheese, and then put some rotel tomatoes on peak (1/2 can no juice). Nosotros both really enjoyed it.
01/14/2007
I made these at the recommendation of my sister. My husband really liked them. I was skeptical of the Cream of Chicken soup at first, merely found that information technology is actually good. Nosotros don't like yogurt so I used sour cream instead. Existence meaning, jalapenos are too spicy so I used mild green chilis instead. I besides used flour tortillas and co-jack cheese. One manner of making them more quickly is layering tortillas and filling in a pie plate sprayed with nonstick spray and baking with cheese on top. This makes it into an enchilada pie of sorts and the cheese on meridian helps the visual appeal. This recipe likewise freezes well. I take as well fabricated this with cooked, diced chicken and it turned out wonderfully. I would recommend this.

These enchiladas were so good and a really overnice alter from the typcial "red sauce" enchiladas. My whole family enjoyed them. The only changes I fabricated were 1/2 yellow onion in place of the green, and sour foam in identify of the yogurt (just because that is what I had in the house at the fourth dimension). I also used 1/two mexican blend cheese and i/2 mozzerella. I served them with Mexican rice and letuse. They were fantastic! Thanks for the great recipe, Vanessa!
10/15/2008
I used the ruddy enchilada sauce to make these and they were so adept. I as well sprinkled cilantro over the summit. These are very like shooting fish in a barrel to make.
02/23/2011
These are amazing! The main reason is the sauce---I wasn't bold enough to utilize the yogurt (I substituted fat free sour cream) but go for the mozzerella, information technology volition surprise you! Information technology made the best, white cheese sauce, very creamy and wonderful. Like something from a restaurant.

Good recipe, I thought these were quite bland for my taste though. I used regular chopped onion, and added minced garlic, chopped pepper, and 2 jalepenos. I also think I needed to put more of the sauce/cheese mixture inside wraps. I will probably try again with some more than adjustments.

Wow, I was really skeptical about this recipe, but it was a big hit. My Husband thought it was the best enchilada he'd always had. Thanks for sharing.
